For the Garlic Parmesan Sauce:

  • 1/4 cup butter, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  • Prepare the sweet potato wedges:
    • Preheat your oven to 425°F (220°C).
    • In a large bowl, toss the sweet potato wedges with olive oil, garlic powder, paprika, red pepper flakes, salt, and pepper until evenly coated.
  • Roast the wedges:
    • Spread the seasoned sweet potato wedges on a baking sheet in a single layer.
    • Roast for 20-25 minutes, flipping halfway, until tender and crispy on the edges.
  • Prepare the garlic Parmesan sauce:
    • In a small bowl, mix the softened butter, grated Parmesan cheese, minced garlic, parsley, lemon juice, salt, and pepper until well combined.
  • Serve:
    • Plate the roasted sweet potato wedges and serve them warm with the garlic Parmesan sauce on the side or drizzled on top.
