- 1 (14.5 oz) can diced tomatoes
- 6 cups chicken or vegetable broth
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 cups chopped kale or spinach (optional)
- Optional: 1/2 cup small pasta or canned beans
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up as it cooks.
- Add onion and garlic, sauté for 2–3 minutes until fragrant.
- Stir in carrots, celery, zucchini, tomatoes, and broth.
- Add oregano, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20–25 minutes, until vegetables are tender.
- Stir in greens and pasta or beans (if using) during the last 5 minutes.
- Adjust seasoning as needed and serve hot with crusty bread.
Notes
- Use turkey sausage or plant-based sausage for a lighter version.
