Ingredients

  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 (14.5 oz) can diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups chopped kale or spinach (optional)
  • Optional: 1/2 cup small pasta or canned beans

Instructions

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up as it cooks.
  • Add onion and garlic, sauté for 2–3 minutes until fragrant.
  • Stir in carrots, celery, zucchini, tomatoes, and broth.
  • Add oregano, thyme, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 20–25 minutes, until vegetables are tender.
  • Stir in greens and pasta or beans (if using) during the last 5 minutes.
  • Adjust seasoning as needed and serve hot with crusty bread.

Notes

  • Use turkey sausage or plant-based sausage for a lighter version.
  • Leftovers freeze well for up to 3 months.
