Description

Sausage and Spinach Breakfast Casserole is a savory and satisfying egg bake packed with crumbled sausage, fresh spinach, and melty cheese. It’s a low-carb, high-protein breakfast that’s easy to prep ahead and perfect for busy mornings or weekend brunch.


Ingredients

  • 1 lb breakfast sausage (pork or turkey)
  • 1 small onion, diced
  • 3 cups fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)
  • 10 large eggs
  • 1/2 cup milk or heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: chopped green onions, hot sauce

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish
  • In a skillet over medium heat, cook sausage and onion until browned. Drain excess grease
  • Add spinach to skillet and cook until wilted (if using fresh)
  • In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper
  • Stir in sausage mixture and cheeses
  • Pour into prepared baking dish and smooth the top
  • Bake for 30–35 minutes, or until center is set and top is golden
  • Let rest 5 minutes before slicing. Top with green onions or hot sauce if desired

  • Swap spinach for kale or broccoli
  • Use dairy-free cheese and milk for a paleo or Whole30 version
