- 1 lb breakfast sausage (pork or turkey)
- 1 small onion, diced
- 3 cups fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)
- 10 large eggs
- 1/2 cup milk or heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional toppings: chopped green onions, hot sauce
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish
- In a skillet over medium heat, cook sausage and onion until browned. Drain excess grease
- Add spinach to skillet and cook until wilted (if using fresh)
- In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper
- Stir in sausage mixture and cheeses
- Pour into prepared baking dish and smooth the top
- Bake for 30–35 minutes, or until center is set and top is golden
- Let rest 5 minutes before slicing. Top with green onions or hot sauce if desired

- Swap spinach for kale or broccoli
- Use dairy-free cheese and milk for a paleo or Whole30 version
- Keeps well in the fridge for up to 4 days
- Can be frozen in slices and reheated for meal prep
