- 4 oz salami, diced
- 4 oz mozzarella cheese, cubed
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
Step 1: Cook the Tortellini
- Cook the tortellini pasta according to package instructions.
- Drain and let it cool to room temperature.
Step 2: Prepare the Salad Ingredients
- In a large mixing bowl, combine the cooled tortellini with:
- Diced salami
- Chopped mozzarella
- Halved cherry tomatoes
- Diced cucumber
Step 3: Make the Dressing
- In a small bowl, whisk together:
- Olive oil
- Red wine vinegar
- Italian seasoning
- Salt and pepper
Step 4: Toss the Salad
- Drizzle the dressing over the salad mixture. Toss everything together until evenly coated.
Step 5: Chill and Serve
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld. Serve chilled and enjoy!
