Description

This Roasted Tomato and Garlic recipe brings out rich, caramelized flavor in every bite. Juicy tomatoes and sweet, mellow garlic are roasted together for a versatile, savory mix that’s perfect for pasta, toast, sauces, or serving alongside your favorite meals.


Ingredients

  • 1 1/2 lbs cherry or grape tomatoes (or Roma, halved)
  • 1 head garlic, cloves separated and peeled
  • 23 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano or thyme (optional)
  • Fresh basil for garnish (optional)

Instructions

  • Preheat oven to 400°F (204°C).
  • Place tomatoes and garlic on a rimmed baking sheet.
  • Drizzle with olive oil and sprinkle with salt, pepper, and herbs. Toss to coat.
  • Roast for 25–30 minutes, until tomatoes are blistered and garlic is golden and soft.
  • Serve warm or let cool and store in a jar for up to 5 days in the fridge.
