Description

- 1 1/2 lbs cherry or grape tomatoes (or Roma, halved)
- 1 head garlic, cloves separated and peeled
- 2–3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano or thyme (optional)
- Fresh basil for garnish (optional)
Instructions
- Preheat oven to 400°F (204°C).
- Place tomatoes and garlic on a rimmed baking sheet.
- Drizzle with olive oil and sprinkle with salt, pepper, and herbs. Toss to coat.
- Roast for 25–30 minutes, until tomatoes are blistered and garlic is golden and soft.
- Serve warm or let cool and store in a jar for up to 5 days in the fridge.
