- 2 sweet potatoes, peeled and sliced thinly
- 2 tsp minced garlic
- 1 tbsp olive oil
- 2 tbsp butter, melted
- 4 tbsp grated Parmesan cheese
- 1/2 tsp garlic salt
- 1/2 tsp fresh cracked pepper
- 1/2 tsp Italian seasoning
- Fresh thyme (for garnish)
Instructions
- Prepare the Sweet Potatoes: Peel and slice sweet potatoes thinly. Preheat the oven to 400ºF (200ºC).
- Coat the Slices: Place sweet potato slices in a resealable plastic bag. Add garlic, olive oil, melted butter, Parmesan cheese, garlic salt, pepper, and Italian seasoning. Seal the bag and shake to coat the slices evenly.
- Arrange in the Dish: Lightly butter a baking dish and arrange the sweet potato slices in a spiral pattern. Sprinkle with fresh thyme and additional Parmesan, if desired.
- Roast: Roast in the preheated oven for 30-35 minutes until the sweet potatoes are tender and golden.
- Serve: Garnish with fresh thyme before serving warm.
