Description

A savory and flavorful side dish featuring tender roasted sweet potatoes coated in garlic, Parmesan, and herbs, perfect for complementing any meal.

 


Ingredients

  • 2 sweet potatoes, peeled and sliced thinly
  • 2 tsp minced garlic
  • 1 tbsp olive oil
  • 2 tbsp butter, melted
  • 4 tbsp grated Parmesan cheese
  • 1/2 tsp garlic salt
  • 1/2 tsp fresh cracked pepper
  • 1/2 tsp Italian seasoning
  • Fresh thyme (for garnish)

Instructions

  • Prepare the Sweet Potatoes: Peel and slice sweet potatoes thinly. Preheat the oven to 400ºF (200ºC).
  • Coat the Slices: Place sweet potato slices in a resealable plastic bag. Add garlic, olive oil, melted butter, Parmesan cheese, garlic salt, pepper, and Italian seasoning. Seal the bag and shake to coat the slices evenly.
  • Arrange in the Dish: Lightly butter a baking dish and arrange the sweet potato slices in a spiral pattern. Sprinkle with fresh thyme and additional Parmesan, if desired.
  • Roast: Roast in the preheated oven for 30-35 minutes until the sweet potatoes are tender and golden.
  • Serve: Garnish with fresh thyme before serving warm.

Notes

  • Use a mandoline slicer for evenly thin slices, ensuring even roasting.
  • For extra crispiness, broil the sweet potatoes for 2-3 minutes after roasting.
  • Adjust the seasoning to taste or add red chili flakes for a spicy kick.
