Description
These Red, White, and Blue Patriotic Fruit Popsicles are a fun and healthy treat perfect for summer celebrations, made with layers of strawberries, coconut milk, and blueberries.

- 1 cup fresh strawberries, hulled and chopped
- 1 tablespoon honey or maple syrup (optional)
- 1 cup canned coconut milk (full-fat for creamier texture)
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- In a blender, puree the strawberries with half a tablespoon of honey or maple syrup until smooth.
- Pour the strawberry mixture into popsicle molds, filling each about one-third full. Freeze for 30-45 minutes until slightly firm.
- In a bowl, mix the coconut milk with vanilla extract and the remaining honey or syrup if desired.
- Pour the coconut milk layer over the frozen strawberry layer until the molds are about two-thirds full. Freeze again for 30-45 minutes.
- Puree the blueberries in a blender until smooth. Optionally, strain to remove skins for a smoother texture.
- Top off the molds with the blueberry puree. Insert popsicle sticks and freeze for at least 4-6 hours or until completely frozen.
- To serve, run warm water over the outside of the molds for a few seconds to release the popsicles.
Notes
- You can use fresh or frozen fruit, just thaw frozen fruit before blending.
- Adjust sweetness to taste or omit sweetener for a no-sugar-added version.
- Use silicone molds for easier release.
