For the Dough:

  • 1 cup warm milk (110°F)
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 2 large eggs
  • 6 tablespoons unsalted butter, softened
  • 2 tablespoons cocoa powder

  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 44 1/2 cups all-purpose flour

For the Filling:

  • 1 cup Nutella

For the Cream Bath:

  • 3/4 cup heavy cream, warmed

  • 8 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

  • 1/4 cup Nutella, warmed for drizzling

Instructions

Prepare the Dough:

  1. Activate Yeast: In the bowl of a stand mixer, combine warm milk and sprinkle yeast over the top. Let it sit for 5 minutes until foamy.
  2. Combine Ingredients: Add eggs, softened butter, cocoa powder, red food coloring, salt, and sugar to the yeast mixture.
  3. Mix Dough: Add 4 cups of flour and mix with the paddle attachment until combined. Let the mixture rest for 5 minutes.
  4. Knead: Switch to the dough hook and knead for 5–7 minutes, adding up to ½ cup more flour as needed. The dough should be elastic and tacky.
  5. Rise: Place the dough in a greased bowl, cover, and let it rise in a warm spot until doubled in size (about 30–45 minutes).

Assemble the Rolls:

  1. Roll Out Dough: Turn out the risen dough onto a floured surface. Roll into a 24×15-inch rectangle.
  2. Add Filling: Spread Nutella evenly over the dough.
  3. Form Rolls: Roll the dough tightly from the long edge, jelly roll-style, and slice into 15 equal pieces.
  4. Arrange in Pan: Place rolls in a greased 10×15-inch baking pan. Cover and let rise for 25 minutes until puffy.

Bake the Rolls:

  1. Preheat Oven: Heat oven to 350°F.
  2. Add Cream Bath: Pour warmed heavy cream over the risen rolls, allowing it to soak in.
  3. Bake: Bake for 25 minutes, checking at 17 minutes. Cover with foil if rolls are browning too quickly.
