Instructions
Prepare the Dough:
- Activate Yeast: In the bowl of a stand mixer, combine warm milk and sprinkle yeast over the top. Let it sit for 5 minutes until foamy.
- Combine Ingredients: Add eggs, softened butter, cocoa powder, red food coloring, salt, and sugar to the yeast mixture.
- Mix Dough: Add 4 cups of flour and mix with the paddle attachment until combined. Let the mixture rest for 5 minutes.
- Knead: Switch to the dough hook and knead for 5–7 minutes, adding up to ½ cup more flour as needed. The dough should be elastic and tacky.
- Rise: Place the dough in a greased bowl, cover, and let it rise in a warm spot until doubled in size (about 30–45 minutes).
Assemble the Rolls:
- Roll Out Dough: Turn out the risen dough onto a floured surface. Roll into a 24×15-inch rectangle.
- Add Filling: Spread Nutella evenly over the dough.
- Form Rolls: Roll the dough tightly from the long edge, jelly roll-style, and slice into 15 equal pieces.
- Arrange in Pan: Place rolls in a greased 10×15-inch baking pan. Cover and let rise for 25 minutes until puffy.
Bake the Rolls:
- Preheat Oven: Heat oven to 350°F.
- Add Cream Bath: Pour warmed heavy cream over the risen rolls, allowing it to soak in.
- Bake: Bake for 25 minutes, checking at 17 minutes. Cover with foil if rolls are browning too quickly.
Frost and Decorate:
- Prepare Frosting: Beat cream cheese and butter until smooth. Add vanilla and powdered sugar, mixing until creamy.
- Frost Rolls: Spread frosting over slightly cooled rolls.
- Decorate: Drizzle warmed Nutella over the frosting and top with Valentine’s sprinkles.
Notes
- Storage: Store rolls in an airtight container at room temperature for up to 2 days or freeze for up to 2 months.
- Substitutions:
- Use milk instead of heavy cream for a lighter cream bath.
- Adjust food coloring or omit if preferred.
- Tools: A stand mixer, dough cutter, and pastry mat make the process easier.
