Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 12 tbsp cold water
  • 1 cup heavy cream
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 tsp fresh thyme leaves, plus more for garnish
  • 2 cups fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs.
  2. Add egg yolk and 1 tbsp cold water. Mix just until dough comes together. Add more water if needed.
  3. Press dough into a tart pan and prick the bottom with a fork. Bake for 20-25 minutes or until golden. Let cool completely.
  4. In a mixing bowl, whip cream until soft peaks form. Add honey, vanilla extract, and thyme; continue to whip until stiff peaks form.
  5. Spoon or pipe the honey cream into the cooled tart shell.
  6. Top with fresh raspberries and garnish with additional thyme leaves.
  7. Chill for at least 1 hour before serving for best results.
