- 3/4 oz fresh lemon or lime juice
- 1/2 oz passionfruit puree or juice
- 1/2 oz raspberry syrup or muddled fresh raspberries (strained)
- 1/2 oz simple syrup (adjust to taste)
- 1 egg white (or 1 oz aquafaba for vegan)
- Ice
- Garnish: fresh raspberry, lemon twist, or edible flower
Instructions
- Dry Shake:
- Add tequila, citrus juice, passionfruit, raspberry, syrup, and egg white (or aquafaba) to a shaker without ice. Shake hard for 15–20 seconds to build foam.
- Shake Again with Ice:
- Add ice to the shaker and shake again until well chilled (another 15 seconds).
- Strain and Serve:
- Strain into a chilled coupe or rocks glass. Let the foam rise, and garnish with a raspberry or lemon twist.

- Use a fine mesh strainer for a smooth finish.
- Adjust sweetness or tartness to your preference by tweaking the syrups.
