Description

A colorful and healthy rainbow veggie pizza topped with a creamy yogurt drizzle, perfect for a light vegetarian meal or snack.


Ingredients

  • 1 whole wheat pizza crust
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped orange bell pepper
  • 1/4 cup corn kernels
  • 1/4 cup chopped broccoli
  • 1/4 cup chopped red cabbage
  • 1/4 cup cherry tomatoes, halved
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place the pizza crust on a baking sheet or pizza stone.
  3. Spread pizza sauce evenly over the crust.
  4. Sprinkle mozzarella cheese on top of the sauce.
  5. Arrange chopped vegetables in rainbow order: red bell pepper, orange bell pepper, corn, broccoli, red cabbage, and cherry tomatoes.
  6. Bake in the oven for 12–15 minutes, until the crust is crispy and cheese is melted.
  7. In a small bowl, mix Greek yogurt, lemon juice, garlic powder, salt, and pepper.
  8. Drizzle the yogurt mixture over the baked pizza.
  9. Slice and serve warm.
