  • 1 bunch radishes (about 8-10), thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon chives or green onions, chopped
  • Salt and pepper to taste
  • Lemon Vinaigrette:
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon maple syrup or agave
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine sliced radishes, cucumber, red onion, dill, and chives.
  • In a small bowl or jar, whisk together olive oil, lemon juice, mustard, maple syrup, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Let the salad sit for 10–15 minutes before serving to allow the flavors to meld.
