Description

A creamy, flavorful baked feta pasta dish made with roasted cherry tomatoes, garlic, and olive oil, all mixed with cooked pasta and fresh basil.


Ingredients

  • 1 block (7 oz) feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 8 oz pasta (penne or pasta of choice)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil leaves, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of a baking dish. Add cherry tomatoes and minced garlic around it.
  3. Drizzle olive oil over the feta and tomatoes. Sprinkle with salt, black pepper, and red pepper flakes if using.
  4. Bake for 30-35 minutes or until tomatoes burst and feta is golden and soft.
  5. While baking, cook the pasta according to package instructions. Drain and set aside.
  6. Once feta and tomatoes are done, mash them with a fork and mix together in the baking dish to form a creamy sauce.
  7. Add cooked pasta to the baking dish and toss until well combined with the sauce.
  8. Garnish with fresh basil before serving.

  • Add spinach or other vegetables for extra nutrition.
  • Can be served warm or at room temperature.
