Description
A creamy, flavorful baked feta pasta dish made with roasted cherry tomatoes, garlic, and olive oil, all mixed with cooked pasta and fresh basil.

- 1 block (7 oz) feta cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 8 oz pasta (penne or pasta of choice)
- Salt, to taste
- Black pepper, to taste
- 1/4 tsp red pepper flakes (optional)
- Fresh basil leaves, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Place the block of feta cheese in the center of a baking dish. Add cherry tomatoes and minced garlic around it.
- Drizzle olive oil over the feta and tomatoes. Sprinkle with salt, black pepper, and red pepper flakes if using.
- Bake for 30-35 minutes or until tomatoes burst and feta is golden and soft.
- While baking, cook the pasta according to package instructions. Drain and set aside.
- Once feta and tomatoes are done, mash them with a fork and mix together in the baking dish to form a creamy sauce.
- Add cooked pasta to the baking dish and toss until well combined with the sauce.
- Garnish with fresh basil before serving.
