Ingredients

  • 4 cups water
  • 1/4 cup fresh ginger, thinly sliced
  • 1 cup pineapple juice (preferably 100% juice)
  • 23 tablespoons honey, agave syrup, or maple syrup (optional)
  • Juice of 1 lemon (optional, for brightness)
  • Ice cubes
  • Pineapple wedges and mint leaves for garnish (optional)

Instructions

  • Bring 4 cups of water and ginger slices to a boil in a saucepan. Reduce heat and simmer for 10 minutes.
  • Remove from heat, strain out the ginger, and allow the ginger tea to cool to room temperature.
  • In a pitcher, combine the cooled ginger tea, pineapple juice, sweetener, and lemon juice if using. Stir well.
  • Chill in the refrigerator for at least 1 hour.
  • Serve over ice and garnish with pineapple wedges and mint leaves if desired.
