- 1/4 cup fresh ginger, thinly sliced
- 1 cup pineapple juice (preferably 100% juice)
- 2–3 tablespoons honey, agave syrup, or maple syrup (optional)
- Juice of 1 lemon (optional, for brightness)
- Ice cubes
- Pineapple wedges and mint leaves for garnish (optional)
Instructions
- Bring 4 cups of water and ginger slices to a boil in a saucepan. Reduce heat and simmer for 10 minutes.
- Remove from heat, strain out the ginger, and allow the ginger tea to cool to room temperature.
- In a pitcher, combine the cooled ginger tea, pineapple juice, sweetener, and lemon juice if using. Stir well.
- Chill in the refrigerator for at least 1 hour.
- Serve over ice and garnish with pineapple wedges and mint leaves if desired.
