Description

Classic peanut butter cookies that are soft, chewy, and full of rich peanut butter flavor.


Ingredients

  • 1 cup peanut butter (creamy or chunky)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda (optional, for slight rise)
  • Pinch of salt (if using unsalted peanut butter)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Add baking soda and salt if using. Mix until well combined.
  3. Roll dough into 1-inch balls and place on prepared baking sheet about 2 inches apart.
  4. Flatten each ball with a fork in a crisscross pattern.
  5. Bake for 10–12 minutes or until the edges are lightly browned.
  6. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a firmer texture, refrigerate dough for 30 minutes before baking.
  • Can substitute part of the sugar with brown sugar for a chewier cookie.
  • Store in an airtight container for up to 5 days.
