Ingredients

Units Scale

For the Bread:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 cup fresh peaches, peeled and chopped
  • 1/4 cup chia seeds (optional, for garnish)

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

Step 1: Preheat and Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a loaf pan or line it with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3: Cream Wet Ingredients

  1. In a large bowl, cream the butter and sugar until light and fluffy using an electric mixer.
  2. Beat in the eggs one at a time. Add the milk and vanilla extract, mixing until well combined.

Step 4: Combine and Fold in Peaches

  1. Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  2. Gently fold in the chopped peaches.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Step 6: Prepare the Glaze

  1. While the bread cools, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  2. Drizzle the glaze over the cooled bread and sprinkle with chia seeds, if desired.

Notes

  • Peach Prep: Use ripe, fresh peaches for maximum flavor. If using canned peaches, drain them thoroughly.
  • Texture Boost: Add a handful of chopped nuts, such as pecans or almonds, for extra crunch.
  • Storage: Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
