For the Bread:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 cup fresh peaches, peeled and chopped
- 1/4 cup chia seeds (optional, for garnish)
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
Step 1: Preheat and Prepare the Pan
- Preheat your oven to 350°F (175°C).
- Grease and flour a loaf pan or line it with parchment paper.
Step 2: Mix Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 3: Cream Wet Ingredients
- In a large bowl, cream the butter and sugar until light and fluffy using an electric mixer.
- Beat in the eggs one at a time. Add the milk and vanilla extract, mixing until well combined.
Step 4: Combine and Fold in Peaches
- Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
- Gently fold in the chopped peaches.
Step 5: Bake the Bread
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Step 6: Prepare the Glaze
- While the bread cools, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Drizzle the glaze over the cooled bread and sprinkle with chia seeds, if desired.
