For the Patties:
- 1 1/4 pounds ground beef (80% lean)
- 2 tablespoons ketchup
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon onion powder
- 1 teaspoon kosher salt
- Freshly ground black pepper
For the Patty Melts:
- 8 slices rye bread
- About 8 ounces sliced Swiss cheese
- 6 tablespoons unsalted butter, divided
Instructions
Step 1: Caramelize the Onions
- Heat olive oil in a large skillet over medium-low heat.
- Add sliced onions and cook, stirring occasionally, for 20–25 minutes until deeply golden brown.
- Season with salt and pepper, then set aside.
Step 2: Prepare the Beef Patties
- In a large bowl, mix together ground beef, ketchup, Worcestershire sauce, onion powder, 1 teaspoon salt, and a pinch of pepper.
- Divide into 4 equal portions and shape into patties slightly wider than the bread slices.
Step 3: Cook the Patties
- Preheat a cast iron skillet over medium-high heat. Melt 2 tablespoons of butter in the skillet.
- Cook patties for 4–5 minutes per side until browned and cooked through. Remove and set aside.
Step 4: Assemble the Patty Melts
- Wipe out the skillet and melt 2 tablespoons of butter over medium heat.
- Lay 4 slices of rye bread, buttered side down, in the skillet. Top each with:
- A cooked beef patty
- A slice of Swiss cheese
- Half the caramelized onions
- Another slice of cheese
- Close with the remaining slices of rye bread, buttered side up.
