  • 1 1/4 pounds ground beef (80% lean)
  • 2 tablespoons ketchup
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • Freshly ground black pepper

For the Patty Melts:

  • 8 slices rye bread
  • About 8 ounces sliced Swiss cheese
  • 6 tablespoons unsalted butter, divided

Instructions

Step 1: Caramelize the Onions

  1. Heat olive oil in a large skillet over medium-low heat.
  2. Add sliced onions and cook, stirring occasionally, for 20–25 minutes until deeply golden brown.
  3. Season with salt and pepper, then set aside.

Step 2: Prepare the Beef Patties

  1. In a large bowl, mix together ground beef, ketchup, Worcestershire sauce, onion powder, 1 teaspoon salt, and a pinch of pepper.
  2. Divide into 4 equal portions and shape into patties slightly wider than the bread slices.

Step 3: Cook the Patties

  1. Preheat a cast iron skillet over medium-high heat. Melt 2 tablespoons of butter in the skillet.
  2. Cook patties for 4–5 minutes per side until browned and cooked through. Remove and set aside.

Step 4: Assemble the Patty Melts

  1. Wipe out the skillet and melt 2 tablespoons of butter over medium heat.
  2. Lay 4 slices of rye bread, buttered side down, in the skillet. Top each with:
    • A cooked beef patty
    • A slice of Swiss cheese
    • Half the caramelized onions
    • Another slice of cheese
  3. Close with the remaining slices of rye bread, buttered side up.

Step 5: Cook the Patty Melts

  1. Cook sandwiches for 2–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.

Step 6: Serve

  1. Transfer to a cutting board, slice diagonally, and serve warm.
