  • 23 tbsp milk or cream
  • 1 tsp vanilla extract
  • Pastel green gel food coloring (start with a small amount and adjust)

Instructions

  • Bake the Cake: Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  • In a bowl, whisk flour, baking powder, and salt.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  • Alternately add flour mixture and milk, beginning and ending with flour.
  • Divide batter evenly into pans and bake for 30–35 minutes. Let cool completely.
  • Make the Frosting: Beat butter until creamy. Gradually add powdered sugar, then vanilla and milk until desired consistency is reached. Add pastel green coloring and beat until smooth and evenly colored.
  • Assemble and Decorate: Layer and frost the cake, smoothing the sides with an offset spatula. Decorate as desired.

Notes

  • For a mint flavor, add a drop of peppermint extract to the frosting.
  • Can be made into a three-layer cake for extra height.
