- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- For the Buttercream Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2–3 tbsp milk or cream
- 1 tsp vanilla extract
- Pastel green gel food coloring (start with a small amount and adjust)
- Optional Decorations:
- Edible gold leaf
- White or pastel sprinkles
- Macarons or sugar flowers
- Piped rosettes or writing
Instructions
- Bake the Cake: Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
- In a bowl, whisk flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
- Alternately add flour mixture and milk, beginning and ending with flour.
- Divide batter evenly into pans and bake for 30–35 minutes. Let cool completely.
- Make the Frosting: Beat butter until creamy. Gradually add powdered sugar, then vanilla and milk until desired consistency is reached. Add pastel green coloring and beat until smooth and evenly colored.
- Assemble and Decorate: Layer and frost the cake, smoothing the sides with an offset spatula. Decorate as desired.
Notes
- For a mint flavor, add a drop of peppermint extract to the frosting.
- Can be made into a three-layer cake for extra height.
