- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cups frozen green peas
- 4 cups vegetable broth (or water)
- 1/2 cup grated Parmesan cheese (plus extra for serving)

Instructions

- Stir in the peas and cook for 2-3 minutes.
- Add the vegetable broth and bring to a gentle boil.
- Add the pasta directly into the broth and cook, stirring frequently, until pasta is al dente and most of the liquid is absorbed (add more water if necessary).
- Stir in the Parmesan cheese and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Notes
- For an even creamier dish, stir in a splash of heavy cream at the end.
- Use fresh peas if they’re in season!
- This dish is meant to be slightly brothy — adjust the consistency to your liking by adding more broth or reducing it further.
