Description

Crispy, buttery, and cheesy, these Parmesan Roasted Potatoes are infused with herb seasoning for a flavorful and easy side dish perfect for any meal!


Ingredients

  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tbsp herb seasoning (e.g., Mrs. Dash), divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs red potatoes, washed
  • Nonstick cooking spray

Instructions

Step 1: Prepare the Pan

  1. Place 1 stick of butter in a 9×13 baking pan.
  2. Put the baking pan in a cool oven and set the temperature to 400°F (200°C).
  3. Allow the butter to melt as the oven preheats. Once melted, remove the pan.

Step 2: Prepare the Potatoes

  1. While the butter is melting, cut the red potatoes in half and score the cut sides with shallow crisscross patterns.

Step 3: Make the Seasoning Mixture

  1. In a small bowl, mix Parmesan cheese, 2 tbsp herb seasoning, salt, and pepper.
  2. Sprinkle this mixture evenly over the melted butter in the pan.

Step 4: Arrange the Potatoes

  1. Place the potatoes cut side down into the pan, directly on top of the seasoning mixture.
  2. Spray the tops of the potatoes with nonstick cooking spray and sprinkle with the remaining 1 tbsp of herb seasoning.

Step 5: Bake the Potatoes

  1. Bake uncovered in the preheated oven for 40 minutes, or until the potatoes are tender and golden brown on the cut sides.

Step 6: Serve

  1. Remove the potatoes from the oven and serve warm. Pair with your favorite main dish or enjoy on their own as a savory snack!
