- 1 stick butter (1/2 cup)
- 1/3 cup grated Parmesan cheese
- 3 tbsp herb seasoning (e.g., Mrs. Dash), divided
- 1 tsp salt
- 1/2 tsp black pepper
- 2 lbs red potatoes, washed
- Nonstick cooking spray
Instructions
Step 1: Prepare the Pan
- Place 1 stick of butter in a 9×13 baking pan.
- Put the baking pan in a cool oven and set the temperature to 400°F (200°C).
- Allow the butter to melt as the oven preheats. Once melted, remove the pan.
Step 2: Prepare the Potatoes
- While the butter is melting, cut the red potatoes in half and score the cut sides with shallow crisscross patterns.
Step 3: Make the Seasoning Mixture
- In a small bowl, mix Parmesan cheese, 2 tbsp herb seasoning, salt, and pepper.
- Sprinkle this mixture evenly over the melted butter in the pan.
Step 4: Arrange the Potatoes
- Place the potatoes cut side down into the pan, directly on top of the seasoning mixture.
- Spray the tops of the potatoes with nonstick cooking spray and sprinkle with the remaining 1 tbsp of herb seasoning.
Step 5: Bake the Potatoes
- Bake uncovered in the preheated oven for 40 minutes, or until the potatoes are tender and golden brown on the cut sides.
Step 6: Serve
- Remove the potatoes from the oven and serve warm. Pair with your favorite main dish or enjoy on their own as a savory snack!
