  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda

  • 3 large eggs
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together almond flour, all-purpose flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, beat the eggs and mix in olive oil, orange juice, orange zest, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Dust with powdered sugar or serve as desired.
