Description

A sweet and tangy chicken dish glazed with orange sauce and served with juicy pineapple, perfect for a tropical twist on dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup pineapple chunks (fresh or canned)
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and sear the chicken breasts on both sides until golden brown, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and ginger, and sauté for 1 minute until fragrant.
  4. In a bowl, mix orange juice, soy sauce, and honey. Add the mixture to the skillet and bring to a simmer.
  5. In a small bowl, dissolve cornstarch in 2 tablespoons of water and add to the skillet, stirring until the sauce thickens.
  6. Return the chicken to the skillet and add pineapple chunks. Simmer for 10-15 minutes until chicken is cooked through and glazed.
  7. Garnish with chopped green onions and sesame seeds if desired. Serve hot with rice or vegetables.

Notes

  • Freshly squeezed orange juice gives the best flavor.
  • Use low-sodium soy sauce for a healthier option.
  • Can be made with chicken thighs for juicier meat.
