- 4 boneless, skinless chicken breasts
- 1 cup orange juice
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 cup pineapple chunks (fresh or canned)
- Salt and pepper to taste
- Green onions and sesame seeds for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear the chicken breasts on both sides until golden brown, about 5 minutes per side. Remove and set aside.
- In the same skillet, add garlic and ginger, and sauté for 1 minute until fragrant.
- In a bowl, mix orange juice, soy sauce, and honey. Add the mixture to the skillet and bring to a simmer.
- In a small bowl, dissolve cornstarch in 2 tablespoons of water and add to the skillet, stirring until the sauce thickens.
- Return the chicken to the skillet and add pineapple chunks. Simmer for 10-15 minutes until chicken is cooked through and glazed.
- Garnish with chopped green onions and sesame seeds if desired. Serve hot with rice or vegetables.
Notes
- Freshly squeezed orange juice gives the best flavor.
- Use low-sodium soy sauce for a healthier option.
- Can be made with chicken thighs for juicier meat.
