- 1/2 cup sugar or coconut sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/3 cup vegetable oil or melted butter
- 1/2 cup fresh orange juice
- 2 tablespoons orange zest
- 1/2 cup plain yogurt or sour cream
- 1 teaspoon vanilla extract
- Optional Orange Glaze:
- 3/4 cup powdered sugar
- 1–2 tablespoons orange juice
- 1/4 teaspoon orange zest
Instructions
- Preheat Oven:
- Preheat to 350°F (175°C). Grease and line a loaf pan or 8-inch round pan.
- Mix Dry Ingredients:
- In a bowl, whisk together flour, baking powder, baking soda, salt, and spices.
- Mix Wet Ingredients:
- In another bowl, whisk sugars, eggs, oil, orange juice, zest, yogurt, and vanilla until smooth.
- Combine & Bake:
- Add dry ingredients to wet and stir until just combined. Pour into prepared pan.
- Bake for 40–45 minutes (loaf) or 30–35 minutes (round), or until a toothpick comes out clean.
- Glaze (Optional):
- Whisk powdered sugar with orange juice and zest. Drizzle over cooled cake.
Notes
- Add chopped walnuts or dried cranberries for texture.
- For a dairy-free version, use plant-based yogurt.
- Store at room temperature for 2 days or refrigerate for up to 5.
