Description

This One Pot Cajun Chicken Pasta combines juicy Cajun-spiced chicken with tender pasta, bell peppers, and a creamy Parmesan sauce. It’s cooked all in one pan, making it a quick, flavorful, and satisfying weeknight dinner with a kick!


Ingredients

  • 1 lb boneless chicken breast or thighs, cut into strips
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning (plus extra to taste)
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (any color)
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 8 oz pasta (penne, fettuccine, or rotini)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Optional: parsley, red pepper flakes for garnish

Instructions

  • Cook Chicken:
  • In a large skillet or pot, heat olive oil over medium-high. Toss chicken with Cajun seasoning and sear until golden and cooked through. Remove and set aside.
  • Sauté Aromatics:
  • In the same pot, add bell peppers and garlic. Sauté for 2–3 minutes until fragrant.
  • Simmer Pasta:
  • Add broth, cream, and uncooked pasta. Stir, bring to a boil, then reduce heat to simmer. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is al dente.
  • Finish the Sauce:
  • Stir in Parmesan and cooked chicken. Simmer another 2–3 minutes until thick and creamy. Season with salt, pepper, and extra Cajun spice if needed.
  • Serve:
  • Garnish with parsley or red pepper flakes. Serve hot!
