- 3 cloves garlic, minced
- 1 bell pepper, sliced (any color)
- 1 1/2 cups chicken broth
- 1 cup heavy cream or half-and-half
- 8 oz pasta (penne, fettuccine, or rotini)
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Optional: parsley, red pepper flakes for garnish
Instructions
- Cook Chicken:
- In a large skillet or pot, heat olive oil over medium-high. Toss chicken with Cajun seasoning and sear until golden and cooked through. Remove and set aside.
- Sauté Aromatics:
- In the same pot, add bell peppers and garlic. Sauté for 2–3 minutes until fragrant.
- Simmer Pasta:
- Add broth, cream, and uncooked pasta. Stir, bring to a boil, then reduce heat to simmer. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is al dente.
- Finish the Sauce:
- Stir in Parmesan and cooked chicken. Simmer another 2–3 minutes until thick and creamy. Season with salt, pepper, and extra Cajun spice if needed.
- Serve:
- Garnish with parsley or red pepper flakes. Serve hot!
