- 1 lb ground beef or ground turkey
- 3 medium potatoes, diced (skin on or peeled)
- 1/2 onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/4 cup shredded cheese (optional)
- Fresh parsley, chopped (optional for garnish)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften and brown.
- Push the potatoes to the side of the skillet and add the remaining 1 tbsp olive oil. Add diced onions and bell pepper; sauté for 2–3 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground meat to the skillet. Break it apart and cook until browned and fully cooked.
- Mix everything together. Season with paprika, thyme, salt, and pepper.
- Continue cooking until potatoes are fork-tender and everything is well combined, about 5–7 more minutes.
- Sprinkle with shredded cheese if desired, cover, and let it melt.
- Garnish with parsley and serve hot.

- Use sweet potatoes for a twist.
- Add chopped spinach or kale toward the end for extra greens.
