Description

This One-Pan Potato & Meat Skillet is a hearty, comforting, and easy weeknight meal made with seasoned ground meat, golden potatoes, and simple vegetables—all cooked in one skillet. It’s quick, satisfying, and packed with flavor.


Ingredients

  • 1 lb ground beef or ground turkey
  • 3 medium potatoes, diced (skin on or peeled)
  • 1/2 onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/4 cup shredded cheese (optional)
  • Fresh parsley, chopped (optional for garnish)

Instructions

  • Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften and brown.
  • Push the potatoes to the side of the skillet and add the remaining 1 tbsp olive oil. Add diced onions and bell pepper; sauté for 2–3 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add ground meat to the skillet. Break it apart and cook until browned and fully cooked.
  • Mix everything together. Season with paprika, thyme, salt, and pepper.
  • Continue cooking until potatoes are fork-tender and everything is well combined, about 5–7 more minutes.
  • Sprinkle with shredded cheese if desired, cover, and let it melt.
  • Garnish with parsley and serve hot.

Notes

  • Use sweet potatoes for a twist.
  • Add chopped spinach or kale toward the end for extra greens.
  • This meal is great for meal prep—reheats well.
