For the Cookies:
- 3/4 cup shortening
- 3/4 cup packed light brown sugar
- 1 large egg
- 1/2 cup molasses
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- Granulated sugar (for rolling)
Instructions
1️⃣ Preheat the Oven:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2️⃣ Cream the Wet Ingredients:
- In a large bowl, beat shortening and brown sugar until light and fluffy.
- Add the egg and molasses, mixing until well combined.
3️⃣ Mix the Dry Ingredients:
- In a separate bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and nutmeg.
4️⃣ Combine & Form Dough:
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Scoop tablespoon-sized portions and roll into balls.
5️⃣ Roll in Sugar & Bake:
- Roll each cookie ball in granulated sugar and place on the baking sheet, 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set but the centers remain soft.
6️⃣ Cool & Serve:
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
