  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 2 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • Granulated sugar (for rolling)

Instructions

1️⃣ Preheat the Oven:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2️⃣ Cream the Wet Ingredients:

  • In a large bowl, beat shortening and brown sugar until light and fluffy.
  • Add the egg and molasses, mixing until well combined.

4️⃣ Combine & Form Dough:

  • Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  • Scoop tablespoon-sized portions and roll into balls.

5️⃣ Roll in Sugar & Bake:

  • Roll each cookie ball in granulated sugar and place on the baking sheet, 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are set but the centers remain soft.

6️⃣ Cool & Serve:

  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
