Ingredients

  • 1 cup white granulated sugar
  • 1/3 cup canola oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

Prepare the Oven and Pan:

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9×5-inch loaf pan with nonstick spray and line the bottom and two sides with parchment paper for easy removal.

Make the Batter:

  1. Mash bananas in a large bowl using a fork until smooth.
  2. Add sugar to the mashed bananas and mix well.
  3. Stir in eggs, vanilla extract, and canola oil until combined.
  4. Sift flour, baking soda, and salt into the banana mixture. Gently stir until just combined; avoid overmixing.

Bake the Bread:

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  1. Allow the banana bread to cool completely in the pan before removing.
