- 1 1/2 cups old-fashioned oats
- 1 1/4 cups all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter, melted
- 3 cups peeled, cored, and chopped apples (about 3 medium apples)
- 1/4 cup granulated sugar (for apple filling)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp cornstarch
- 1 tsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine oats, flour, brown sugar, granulated sugar, baking soda, and salt.
- Stir in melted butter until the mixture is crumbly and well-combined.
- Reserve 1 cup of the mixture for topping and press the rest into the bottom of the prepared pan to form a crust.
- In a separate bowl, mix chopped apples, granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice.
- Spread the apple mixture evenly over the crust in the pan.
- Sprinkle the reserved oat mixture on top of the apple filling.
- Bake for 35–40 minutes, or until the top is golden brown and the apples are tender.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- You can use a mix of tart and sweet apples for more depth of flavor.
- These bars store well in the refrigerator for up to 5 days.
- Serve warm with vanilla ice cream for a delicious treat.
