Instructions
- Blend the watermelon until smooth, then strain to remove pulp (optional).
- In a glass, muddle mint leaves and lime juice to release the flavors.
- Add honey or simple syrup if using, and mix well.
- Fill the glass with ice and pour in the watermelon juice.
- Top with sparkling water and stir gently.
