Description

  • 200g speculoos biscuits
  • 100g melted butter

For the filling:

  • 100g icing sugar
  • Zest of 1 lemon

  • 400g fresh strawberries, washed and rinsed

Instructions

1️⃣ Prepare the crust: Crush the speculoos biscuits into fine crumbs using a food processor or a rolling pin. Mix with melted butter until well combined. Press the mixture firmly into the base of a pie dish. Refrigerate for at least 30 minutes to set.

2️⃣ Make the filling: In a bowl, whisk together mascarpone, icing sugar, lemon zest, and vanilla extract until smooth and creamy.
