Ingredients

Units Scale
  • 1 1/2 cups shredded coconut
  • 1 cup pecans, chopped
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 cups quick oats

Instructions

Toast the pecans and coconut (optional)

In a dry skillet over medium heat, toast the pecans and coconut until fragrant (about 2-3 minutes). Set aside.
Prepare the praline mixture

In a saucepan over medium heat, melt the butter.
Add brown sugar and sweetened condensed milk, stirring constantly.
Bring to a gentle boil and cook for 2 minutes, stirring frequently.
Mix the ingredients

Remove the saucepan from heat.
Stir in vanilla extract, salt, and cinnamon (if using).
Fold in quick oats, toasted pecans, and shredded coconut. Mix until fully coated.
Shape the cookies

Drop spoonfuls of the mixture onto parchment paper.
Let them cool at room temperature for 30-40 minutes or until set.
Enjoy!

Once firm, serve and enjoy these chewy, praline-inspired treats!

Notes

For a crunchier texture, use old-fashioned oats instead of quick oats.
Drizzle with melted chocolate for an extra indulgent twist.
Store in an airtight container at room temperature for up to 5 days.
