Description

  • 1 1/2 cups pecans, chopped
  • 1 1/2 cups sweetened shredded coconut
  • 1 tsp vanilla extract

Instructions

  1. Melt the butter:
    In a medium saucepan over medium heat, melt the butter, stirring occasionally to avoid burning.
  2. Combine and boil:
    Add the granulated sugar, brown sugar, heavy cream, and salt to the saucepan. Stir until combined, then bring the mixture to a boil. Boil for 3 minutes, stirring constantly, until it begins to thicken.
  3. Add pecans, coconut, and vanilla:
    Remove the saucepan from heat. Stir in the chopped pecans, shredded coconut, and vanilla extract, ensuring all ingredients are well-coated in the caramel mixture.
  4. Shape the cookies:
    Line a baking sheet with parchment paper. Drop spoonfuls of the mixture onto the sheet, shaping them into cookies.
  5. Set the cookies:
    Let the cookies cool at room temperature until set (20-30 minutes). For faster setting, place the baking sheet in the refrigerator.
  6. Serve and store:
    Once set, the cookies are ready to enjoy! Store any leftovers in an airtight container at room temperature for up to a week.

Notes
