- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup heavy cream
- 1/4 tsp salt
- 1 1/2 cups pecans, chopped
- 1 1/2 cups sweetened shredded coconut
- 1 tsp vanilla extract
Instructions
- Melt the butter:
In a medium saucepan over medium heat, melt the butter, stirring occasionally to avoid burning. - Combine and boil:
Add the granulated sugar, brown sugar, heavy cream, and salt to the saucepan. Stir until combined, then bring the mixture to a boil. Boil for 3 minutes, stirring constantly, until it begins to thicken. - Add pecans, coconut, and vanilla:
Remove the saucepan from heat. Stir in the chopped pecans, shredded coconut, and vanilla extract, ensuring all ingredients are well-coated in the caramel mixture. - Shape the cookies:
Line a baking sheet with parchment paper. Drop spoonfuls of the mixture onto the sheet, shaping them into cookies. - Set the cookies:
Let the cookies cool at room temperature until set (20-30 minutes). For faster setting, place the baking sheet in the refrigerator. - Serve and store:
Once set, the cookies are ready to enjoy! Store any leftovers in an airtight container at room temperature for up to a week.
Notes
- Adjust the size of the cookies to your preference. Smaller cookies will set more quickly.
- Use unsweetened coconut if you prefer a less sweet cookie.
