Instructions
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until evenly moistened.
- Press the mixture into the bottom of a 9-inch pie pan to form a crust. Chill in the refrigerator for 20 minutes to set.
- In a small saucepan over medium heat, combine blueberries, chia seeds, honey (or maple syrup), and lemon juice. Cook for 5-7 minutes until the mixture thickens. Let it cool.
- In a large bowl, beat cream cheese until smooth. Add Greek yogurt, powdered sugar, and vanilla extract. Mix until creamy and well combined.
- Spread the cream cheese mixture evenly into the prepared crust.
- Top the pie with the cooled blueberry chia mixture, spreading it evenly over the cream layer.
- Chill the pie for at least 2-3 hours or until set. Top with whipped cream if desired before serving.
