- 1/2 cup unsalted butter, softened
- 1/2 cup peanut butter
- 1/4 cup white miso paste
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, peanut butter, miso paste, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla extract, beating until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each dough ball slightly with a fork.
- Bake for 10–12 minutes or until the edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use white miso for a more subtle flavor; red miso will give a stronger taste.
- Cookies can be stored in an airtight container for up to a week.
- For extra texture, consider adding chopped peanuts or chocolate chips.
