Scale
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 2 tablespoons white miso paste
- 1/2 teaspoon vanilla extract (optional)
Instructions
- In a medium saucepan, combine the sugar and water over medium heat, stirring gently until the sugar dissolves.
- Stop stirring and allow the mixture to boil until it turns a deep amber color, about 5–7 minutes.
- Carefully add the heavy cream while whisking continuously (the mixture will bubble up vigorously).
- Reduce the heat to low and add the butter, stirring until melted and smooth.
- Whisk in the miso paste until fully incorporated and smooth.
- Optional: stir in the vanilla extract for added depth of flavor.
- Remove from heat and let cool slightly before transferring to a jar or container.
Notes
- Use white miso for a milder flavor; red miso will result in a more intense and salty sauce.
- Store in an airtight container in the refrigerator for up to 2 weeks.
- Warm slightly before serving if it thickens in the fridge.
