  • 1 cup fresh lemon juice (about 4-6 lemons)
  • 1/2 cup fresh mint leaves, packed
  • 1/2 cup sugar or honey (adjust to taste)
  • 4 cups cold water
  • 1 cup ice
  • Lemon slices and mint sprigs for garnish (optional)

Instructions

  • In a small saucepan, combine sugar (or honey) with 1/2 cup water. Heat gently and stir until dissolved to make a simple syrup. Let it cool.
  • In a blender, combine mint leaves, lemon juice, and the cooled simple syrup. Blend until mint is finely chopped.
  • Pour the mint-lemon mixture into a pitcher. Add the remaining cold water and ice. Stir well.
  • Taste and adjust sweetness or acidity if needed.
  • Serve cold, garnished with lemon slices and mint sprigs.

Notes

  • For an ultra-smooth texture, strain the blended mixture before adding water.
  • Make it sparkling by substituting some of the water with chilled club soda.
  • Store in the fridge for up to 2 days.
