Instructions
- Let the ice cream sit at room temperature for 5-10 minutes to soften slightly.
- Place 12 cookies flat side up on a baking sheet or tray.
- Scoop about 1 tablespoon of softened ice cream onto each cookie.
- Top with another cookie, flat side down, and gently press to form a sandwich.
- Roll the edges in mini chocolate chips or sprinkles if desired.
- Place the sandwiches back on the tray and freeze for at least 1 hour before serving.
