Description

Mini Ice Cream Sandwiches are a fun and easy frozen treat made by layering your favorite ice cream between small cookies, perfect for parties or a quick dessert.


Ingredients

  • 24 mini chocolate chip cookies
  • 1/2 cup mini chocolate chips or sprinkles (optional, for coating)

Instructions

  1. Let the ice cream sit at room temperature for 5-10 minutes to soften slightly.
  2. Place 12 cookies flat side up on a baking sheet or tray.
  3. Scoop about 1 tablespoon of softened ice cream onto each cookie.
  4. Top with another cookie, flat side down, and gently press to form a sandwich.

  6. Place the sandwiches back on the tray and freeze for at least 1 hour before serving.
