Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with liners.
- In a bowl, combine oats, almond flour, honey (or maple syrup), coconut oil, vanilla, salt, and cinnamon. Mix until sticky and combined.
- Scoop about 1–2 tablespoons of the mixture into each mini muffin cup. Press firmly into the bottom and up the sides to form a cup shape.
- Bake for 10–12 minutes or until golden brown. Let cool completely in the pan.
- Once cooled, fill each granola cup with a spoonful of Greek yogurt.
- Top with fresh berries, chopped fruit, or a sprinkle of extra granola.
