  • 1/4 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract

  • 1 cup Greek yogurt (for filling)

Instructions

  • Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with liners.
  • In a bowl, combine oats, almond flour, honey (or maple syrup), coconut oil, vanilla, salt, and cinnamon. Mix until sticky and combined.
  • Scoop about 1–2 tablespoons of the mixture into each mini muffin cup. Press firmly into the bottom and up the sides to form a cup shape.
  • Bake for 10–12 minutes or until golden brown. Let cool completely in the pan.
