Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, combine rolled oats, chopped nuts, and salt.
- In a separate small bowl, mix honey (or maple syrup), melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Press the mixture firmly into the mini muffin tin cups to form small cup shapes.
- Bake for 12-15 minutes or until golden brown and crisp.
- Remove from oven and allow to cool completely before removing from the tin.
- Optional: Fill the cups with yogurt, fresh fruit, or nut butter before serving.
