Meatloaf:

  • 1 1/2 lbs ground beef (or a mix of beef and pork)
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1 cup crushed tortilla chips (or breadcrumbs)
  • 1 cup shredded Mexican blend cheese
  • 2 eggs
  • 1 medium onion, finely diced
  • 1 medium bell pepper (red or green), finely diced
  • 1/2 cup salsa
  • 2 tbsp chopped fresh cilantro (optional)

Topping:

  • 1/2 cup salsa
  • 1/2 cup shredded Mexican blend cheese

Optional Garnishes:

  • Sliced jalapeños
  • Sour cream
  • Diced avocado or guacamole
  • Chopped fresh cilantro
  • Additional salsa

Instructions

1. Preheat the Oven

  • Preheat oven to 375°F (190°C).
  • Lightly grease a loaf pan or line a baking sheet with parchment paper.

2. Mix the Meatloaf Ingredients

  • In a large bowl, combine ground beef, taco seasoning, crushed tortilla chips, cheese, eggs, onion, bell pepper, salsa, and cilantro (if using).
  • Mix until just combined—do not overmix to ensure a tender texture.

3. Shape the Meatloaf

  • Transfer the mixture to the prepared loaf pan or baking sheet.
  • Shape into a loaf about 9 inches long and 5 inches wide.

4. Add the First Layer of Topping

  • Spread ½ cup salsa evenly over the top of the meatloaf.

5. Bake the Meatloaf

  • Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and sprinkle ½ cup shredded cheese over the top.

6. Melt the Cheese

  • Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

7. Rest and Serve

  • Let the meatloaf rest for 5-10 minutes before slicing to maintain its shape.
  • Garnish with optional toppings like jalapeños, sour cream, or guacamole.
