Description

These Matcha Pistachio Bliss Balls are a healthy, no-bake snack packed with antioxidants, healthy fats, and natural sweetness. Perfect for a quick energy boost or a guilt-free treat.

  • 1/2 cup shredded coconut (unsweetened)
  • 10 Medjool dates, pitted
  • 1 tbsp matcha green tea powder
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • Extra shredded coconut or crushed pistachios for coating (optional)

Instructions

  1. In a food processor, blend the pistachios until they become a coarse meal.
  2. Add the shredded coconut, pitted dates, matcha powder, coconut oil, vanilla extract, and sea salt. Blend until the mixture is well combined and sticky.
  3. Check the consistency — the mixture should hold together when pinched. If too dry, add a teaspoon of water and blend again.
  4. Roll the mixture into small balls using your hands.
  5. Optional: Roll each ball in shredded coconut or crushed pistachios for extra texture and flavor.
  6. Refrigerate for at least 30 minutes to firm up before serving.
