- Pinch of sea salt
- Extra shredded coconut or crushed pistachios for coating (optional)
Instructions
- In a food processor, blend the pistachios until they become a coarse meal.
- Add the shredded coconut, pitted dates, matcha powder, coconut oil, vanilla extract, and sea salt. Blend until the mixture is well combined and sticky.
- Check the consistency — the mixture should hold together when pinched. If too dry, add a teaspoon of water and blend again.
- Roll the mixture into small balls using your hands.
- Optional: Roll each ball in shredded coconut or crushed pistachios for extra texture and flavor.
- Refrigerate for at least 30 minutes to firm up before serving.
- Store in an airtight container in the fridge for up to a week.
