Instructions
- In a large bowl, whisk together flour, sugar, matcha powder, baking powder, and salt.
- In another bowl, beat eggs, then add milk and melted butter.
- Combine wet ingredients into dry ingredients and mix until smooth.
- Heat oil in a deep fryer or heavy pan to 350°F (175°C).
- Drop spoonfuls of dough into the hot oil, frying doughnuts until golden brown on both sides, about 2-3 minutes per side.
- Drain doughnuts on paper towels and let cool slightly.
- Whip the heavy cream until stiff peaks form.
- Fill a piping bag with custard and pipe into the center of each doughnut.
- Top doughnuts with a dollop of whipped cream.
- Dust with powdered sugar and serve.
