- 1 tablespoon matcha green tea powder
- 1/4 teaspoon salt
- 3 large eggs
- 2 tablespoons sugar
- 2 cups milk
- 2 tablespoons unsalted butter, melted

- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for cream)
Instructions
- In a large bowl, sift together flour, matcha powder, and salt.
- In another bowl, whisk eggs and sugar until combined, then add milk, melted butter, and vanilla extract.
- Gradually whisk the wet ingredients into the dry ingredients until smooth.
- Strain the batter through a fine sieve to remove lumps. Chill for at least 1 hour.
- Heat a non-stick skillet over medium-low heat and lightly grease it.
- Pour about 1/4 cup of batter into the pan, swirl to coat evenly, and cook for 1-2 minutes until set. Flip and cook for 15 seconds. Repeat to make 20-25 crepes. Cool completely.
- Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- To assemble, place a crepe on a plate, spread a thin layer of whipped cream, and repeat with remaining crepes and cream, ending with a crepe on top.
- Chill the cake for at least 2 hours or overnight before serving.
- Optional: Dust the top with additional matcha powder or powdered sugar before serving.
