Description

A delicate and visually stunning Matcha Crepe Cake made with layers of thin green tea crepes stacked with lightly sweetened whipped cream, perfect for dessert or a special occasion.


Ingredients

  • 1 tablespoon matcha green tea powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 tablespoons sugar
  • 2 cups milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for cream)

Instructions

  1. In a large bowl, sift together flour, matcha powder, and salt.
  2. In another bowl, whisk eggs and sugar until combined, then add milk, melted butter, and vanilla extract.
  3. Gradually whisk the wet ingredients into the dry ingredients until smooth.
  4. Strain the batter through a fine sieve to remove lumps. Chill for at least 1 hour.
  5. Heat a non-stick skillet over medium-low heat and lightly grease it.
  6. Pour about 1/4 cup of batter into the pan, swirl to coat evenly, and cook for 1-2 minutes until set. Flip and cook for 15 seconds. Repeat to make 20-25 crepes. Cool completely.
  7. Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  8. To assemble, place a crepe on a plate, spread a thin layer of whipped cream, and repeat with remaining crepes and cream, ending with a crepe on top.
  9. Chill the cake for at least 2 hours or overnight before serving.
  10. Optional: Dust the top with additional matcha powder or powdered sugar before serving.
