- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 tablespoons matcha green tea powder
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese until smooth. Add the sugar and continue to beat until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
- Dissolve the matcha powder in heavy cream, then add to the batter and mix until evenly blended.
- Pour the batter over the crust in the pan and smooth the top.
- Bake for 50-60 minutes, or until the center is set and only slightly jiggles.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a more intense matcha flavor, increase the matcha powder to 3 tablespoons.
- Ensure all ingredients are at room temperature to avoid lumps in the batter.
- Serve with whipped cream or a dusting of matcha on top for presentation.
