Ingredients

  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (60g) powdered sugar
  • 1/2 tsp salt
  • 2 large egg yolks
  • 2 cups (250g) all-purpose flour
  • 1 1/2 tbsp matcha green tea powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg yolks and mix until fully incorporated.
  4. In a separate bowl, whisk together the flour, matcha powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Roll the dough into a log, wrap in plastic, and refrigerate for 30 minutes to firm up.
  7. Slice the dough into 1/4 inch thick rounds and place on the prepared baking sheet.
  8. Bake for 10-12 minutes or until the edges are just starting to turn golden.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
