- 1 cup (227g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (60g) powdered sugar
- 1/2 tsp salt
- 2 large egg yolks
- 2 cups (250g) all-purpose flour
- 1 1/2 tbsp matcha green tea powder
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and powdered sugar until light and fluffy.
- Add the egg yolks and mix until fully incorporated.
- In a separate bowl, whisk together the flour, matcha powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Roll the dough into a log, wrap in plastic, and refrigerate for 30 minutes to firm up.
- Slice the dough into 1/4 inch thick rounds and place on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are just starting to turn golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
