Ingredients

  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes in oil, chopped
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 8 oz pasta (penne or fettuccine)
  • Optional: red pepper flakes, fresh basil, spinach

Instructions

  • Cook Pasta:
  • Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain.
  • Cook Chicken:
  • Season chicken with salt, pepper, and Italian seasoning.
  • In a skillet, heat olive oil over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and slice.
  • Make the Sauce:
  • In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
  • Add broth and simmer 2–3 minutes. Stir in cream and Parmesan, simmering until the sauce thickens slightly.
  • Combine and Finish:
  • Toss cooked pasta into the sauce. Stir in reserved pasta water as needed.
  • Add sliced chicken back to the pan. Stir in spinach or basil if desired.
