- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes in oil, chopped
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 8 oz pasta (penne or fettuccine)
- Optional: red pepper flakes, fresh basil, spinach
Instructions
- Cook Pasta:
- Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain.
- Cook Chicken:
- Season chicken with salt, pepper, and Italian seasoning.
- In a skillet, heat olive oil over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and slice.
- Make the Sauce:
- In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Add broth and simmer 2–3 minutes. Stir in cream and Parmesan, simmering until the sauce thickens slightly.
- Combine and Finish:
- Toss cooked pasta into the sauce. Stir in reserved pasta water as needed.
- Add sliced chicken back to the pan. Stir in spinach or basil if desired.
- Serve hot with extra Parmesan and fresh herbs.
