- Salt and pepper, to taste
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes (adjust to taste)
- 1/2 cup sun-dried tomatoes, chopped
- 3/4 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon smoked paprika (optional)
- 1 teaspoon Italian seasoning
- Optional: chopped basil or parsley for garnish
Instructions
- Sear the Chicken:
- Season chicken with salt, pepper, and smoked paprika.
- In a large skillet over medium-high heat, heat olive oil. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
- Make the Spicy Sauce:
- In the same skillet, sauté garlic and crushed red pepper flakes until fragrant (about 30 seconds).
- Add sun-dried tomatoes and stir for another minute.
- Pour in chicken broth and scrape up browned bits. Simmer for 2 minutes.
- Stir in cream, Parmesan, and Italian seasoning. Simmer until slightly thickened.
- Finish Cooking:
- Return chicken to skillet. Simmer 5–10 minutes, or until cooked through and sauce is thick and creamy.
- Serve:
- Garnish with fresh basil or parsley. Serve over pasta, rice, or mashed potatoes.
