- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/4 cup sun-dried tomatoes in oil, chopped
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 oz pasta (penne or fettuccine)
- Optional: crushed red pepper flakes, fresh basil, spinach
Instructions
- Cook Pasta:
- Boil pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
- Cook Chicken:
- Season chicken with salt, pepper, and Italian seasoning.
- Sear in a skillet with olive oil over medium heat, 5–6 minutes per side, until golden and cooked through. Remove and slice.
- Make the Sauce:
- In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Add broth and simmer. Stir in heavy cream and Parmesan. Simmer until the sauce thickens.
- Combine:
- Toss pasta into the sauce, adding reserved pasta water as needed. Stir in sliced chicken and any optional spinach or herbs. Heat through and serve hot.
