Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt, pepper, and Italian seasoning, to taste
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes in oil, chopped
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (penne or fettuccine)
  • Optional: crushed red pepper flakes, fresh basil, spinach

Instructions

  • Cook Pasta:
  • Boil pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
  • Cook Chicken:
  • Season chicken with salt, pepper, and Italian seasoning.
  • Sear in a skillet with olive oil over medium heat, 5–6 minutes per side, until golden and cooked through. Remove and slice.
  • Make the Sauce:
  • In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
  • Add broth and simmer. Stir in heavy cream and Parmesan. Simmer until the sauce thickens.
  • Combine:
  • Toss pasta into the sauce, adding reserved pasta water as needed. Stir in sliced chicken and any optional spinach or herbs. Heat through and serve hot.
