  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk (room temperature)
  • 1/4 cup vegetable oil
  • 2 large eggs (room temperature)
  • 2 tablespoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup black food coloring gel

For the Frosting:

  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1/2 cup blackberry preserves

For Garnish:

  • Fresh blackberries
  • Dark chocolate shavings
  • Fresh mint leaves

Instructions

Prepare Your Baking Pans

  • Preheat your oven to 350°F (175°C). Grease and dust three 8-inch round cake pans with cocoa powder to prevent sticking.

2. Combine Dry Ingredients

  • In a large mixing bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt.

3. Mix Wet Ingredients

  • In a separate bowl, combine buttermilk, eggs, vegetable oil, and vanilla extract. Gradually mix the wet ingredients into the dry ingredients until well incorporated.

4. Add Water and Food Coloring

  • Slowly mix in boiling water and black food coloring gel. Stir until the batter is smooth and evenly colored.

5. Bake the Cake

  • Divide the batter evenly among the prepared pans.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

6. Prepare the Frosting

  • Cream the butter until smooth and fluffy.
  • Gradually add powdered sugar, cocoa powder, and vanilla extract. Add heavy cream a little at a time and beat until light and fluffy.

7. Assemble the Cake

  • Spread a layer of blackberry preserves between each cake layer.
  • Frost the sides and top of the cake with the chocolate frosting, smoothing it with an offset spatula for a polished look.

8. Garnish

  • Decorate the cake with fresh blackberries, dark chocolate shavings, and mint leaves.

Notes

  • Room Temperature Ingredients: Ensure ingredients like eggs, butter, and buttermilk are at room temperature for a smoother batter.
  • Moist Cake: Wrap cake layers in plastic wrap and refrigerate overnight for enhanced flavor and moisture.
  • Professional Finish: Use an offset spatula for smooth frosting application.
